No Television: Day 8 and Banana Pancakes!

This whole “no TV” thing just gets easier and easier. Today Little Girl woke up happy (always does when Daddy is around). Her first question: “Is today the day that Daddy makes pancakes?” Yes, my friend, yes it is. Our Saturday morning family tradition isn’t cartoons, it is PANCAKES!

My husband spent a decade cooking at Denny’s in his younger years, and he actually misses it occasionally. The remedy? Cook enough breakfast every Saturday morning to feed our family and anyone else who happens to drop by. Pure deliciousness. He has perfected his own recipe over the years. These are fluffy and sweet – no syrup required.

Mr. NTNT’s Saturday Morning Banana Pancakes

1 c flour

2 tsp baking powder

2 Tbsp brown sugar

1/4 tsp salt

1 egg

1 c milk

2 tsp vanilla

1 Tbsp oil or butter

1 mashed banana

Mix it all together, pour on a hot buttered griddle. Put on blueberries, chocolate chips or (in the case of this morning) M&Ms when the edges harden and it starts to bubble, and flip. Check for doneness after a minute and take them off when finished. I like these hot or cold!

After breakfast we went out and played in the snow, cleaned the house and dropped Little Girl off for her first sleepover with her Aunt at college. You should have heard her scream “YEAH!” when I asked her if she was going to help Aunt do laundry! I wish everything could stay as exciting as it is when you’re 3.

    • I’m glad you enjoyed them! They work great with buttermilk, too, which is all we had yesterday for Pancake Saturday. Soda water also works, believe it or not! Not a fussy recipe, that is for sure.
